Melt the butter in a microwave safe bowl for 30-60 seconds.
Stir in the peanut butter, monkfruit sweetener and vanilla until smooth and creamy.
Use a small cookie scoop to add the mixture into each cup of a mini muffin pan. I had to use 2 pans as this makes 36 bites. *If you don’t have a mini muffin pan, place it in an 8×8″ pan and just cut them into bites later.
Silicone works best! Or use paper liners!
Top each one with 1/2 Tbsp of peanuts and 1/8 tsp of course pink salt.
Place in freezer. Store for up to three months.
