Breakfast Casserole!

Ingredients:

  • 6oz bacon about 5 slices chopped
  • 1 cup onion chopped
  • 2 cups bell peppers( any color) chopped
  • 12 eggs
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 cup shredded cheddar cheese

Instructions:

  • Preheat oven to 350 degrees
  • Grease 9-13 casserole dish set aside
  • In large skillet over medium heat cook bacon until soft
  • Add garlic, onion and peppers and cook until bacon starts to brown.
  • 5-10 minutes covered.
  • Remove from heat and let cool.
  • In a bowl whisk the eggs and add the salt and pepper.
  • Add the bacon/veggies to the eggs and combine.
  • Add cheese and combine
  • Pour into baking dish and spread evenly.
  • Bake for 25-30 minutes.   
  • Cool for 5 minutes and serve.
  • Cut into squares and put in airtight container and refrigerate.
