Chocolate Caramel Cashew Clusters!!

Let’s prepare Chocolate Caramel Cashew Clusters using delicious ingredients.

Ingredients:

  • 1 cup cashews
  • Sugar-free caramel sauce(see recipe below)
  • 2 cup chocolate chips (we used bake Believe brand) your choice of semi-sweet, dark or white chocolate
  • 1 Tbsp coconut oil
  • Coarse sea salt

Instructions on how to prepare the Chocolate Caramel Cashew Clusters:

  • Place cashews in mini muffin pan lined with baking cups or use a silicone baking pan (this recipe makes approx. 24 candies).
  • Melt chocolate and coconut oil until smooth. Heat at 30-second intervals and stir after every 30 seconds.
  • Heat caramel sauce until it’s smooth and pours easily (we made ours the day before).
  • Pour caramel sauce over each nut cluster then top with chocolate sauce.
  • Sprinkle with coarse sea salt.
  • Freeze for at least 30 minutes until they harden and enjoy!

Preparing Sugar-Free Caramel Sauce”

Ingredients:

  • 1/3 cup butter (we use Kerrygold)
  • 3 Tbsp Brown sugar Swerve
  • 2/3 cup heavy whipping cream
  • 1 teaspoon vanilla

Instructions:

  • In a large frying pan over LOW heat melt the butter and brown sugar stirring constantly.
  • Add heavy whipping cream and continue to stir for 6 minutes.
  • At 6 minutes add the vanilla and stir for an additional 5-6 minutes or until the sauce thickens.
