Creamy Tuscan Salmon Recipe!

Ingredients:

  • 3 salmon fillets
  • 2 teaspoons olive oil
  • 2 tablespoons butter
  • 1 small yellow onion, diced
  • 1/3 cup broth
  • 5 oz jarred sun-dried tomato
  • 1 3/4 cups heavy cream
  • Salt and pepper, to taste
  • 3 cups baby spinach leaves
  • 1/2 cup grated Parmesan
  • 1 tablespoon fresh parsley, chopped

Instructions on preparing creamy Tuscan salmon recipe:

  • Heat oil in pan over medium-high heat and add salmon.
  • Seer on both sides until done, about 5 minutes on each side.
  • Remove from skillet.
  • In same pan add onions and brown.
  • Add in sun dried tomatoes and fry for 1-2 minutes.
  • Add vegetable broth and cook to reduce slightly.
  • Reduce heat to low and add heavy cream simmer for 3-4 minutes.
  • Season with salt and pepper. Then, add Parmesan cheese and allow to simmer until cheese melts.
  • Return salmon to pan and sprinkle with parsley.
  • Spoon sauce over salmon and serve.
