Sugar-Free Buttercream Candy

Sugar-Free Buttercream Candy Recipe!

Ingredients for filling:

  • 1/4 cup butter softened
  • 1 1/2 oz. cream cheese softened
  • 3/4 tsp flavored extract (we used lemon)
  • 1 1/2 cups swerve confectioners sugar

Ingredients for chocolate coating:

  • 4 oz. unsweetened baking chocolate (we used Lily’s)
  • 1 oz cocoa butter
  • 3 Tbls swerve confectioners sugar
  • 1/2 tsp vanilla extract

Instructions on how to prepare Sugar-Free Buttercream Candy:

  • Combine the butter and cream cheese in a large bowl. Beat on medium speed scraping the sides often until smooth.
  • Add vanilla and continue beating until well mixed.
  • At low speed slowly add confectioners sugar until well mixed. Place mixture in the refrigerator for about an hour or at least 10 minutes in the freezer so the mixture is easier to work with. Use a spoon or cookie scoop to make even-sized balls. Place balls in the freezer while making the chocolate coating.

Chocolate coating:

  • In a Chocolate Melter or double boiler, melt all the coating ingredients together.
  • Remove the balls from the freezer, dip in chocolate and coat completely. Place on parchment lined cookie sheet to harden. Place in refrigerator for at least an hour. Put in an air tight container and store in refrigerator.

2 candies = 69 calories – 1.9g carbs – .9g protein – 7.4g fat – 1g fiber – .9g net carbs
